Banana Oat Loaf

I tweaked an already Low Fat recipe and made it more Low Fat all while still keeping it moist!  It is so delicious!!

1 cup mashed ripe bananas (about 2 large)

1/2 cup granulated sugar

1/2 cup “no added sugar” apple sauce

1/3 cup skim milk

2 egg whites, slightly beaten

1 1/4 cups all-purpose flour

1 cup Old-Fashioned Oats

2 teaspoons baking powder

1/2 teaspoon baking soda

Heat oven to 350.  Lightly spray 8x4inch or 9x5inch loaf pan with – cooking spray, or oil lightly.  Combine bananas, sugar, apples sauce, milk and egg whites; mix well.  Add combined flour, oats, baking powder and baking soda, mixing just until moistened.  Pour into prepared pan.  Bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean.  Cool 10 minutes; remove from pan.  Cool completely on wire rack.

AND NOW ENJOY!  Warm it up in the microwave and it is a great breakfast in the morning to get your day going right. =)
